A bottling funnel is a small, cheap tool that removes most of the mess from filling bottles. A wide mouth takes liquid quickly, a narrow stem fits a bottle neck, and the whole thing rinses clean in seconds. It matters more than people expect: spills on the outside of a bottle carry sugar, which attracts insects and makes the bottle unpleasant to handle when you open it later.
A highlighted stage means this tool has a direct role at that point in the process. Ticking several stages is normal — a thermometer, for example, is useful during both the first and second fermentation.
The funnel touches the brew, so it must be clean and food-grade. Never use a funnel that has handled non-food liquids, and never use a rusty or pitted metal funnel, where the surface cannot be properly cleaned and can harbour microbes. If the funnel has a strainer, check that the mesh is intact — wire fragments in a bottle are a hazard. Rinse away any spilled liquid from the outside of the bottle before storing it.

Finished kombucha contains trace alcohol and caffeine. It is not suitable for children, and anyone who is pregnant, breastfeeding, immunocompromised, diabetic or taking medication should speak to a healthcare professional before drinking it. Kombucha is a food, not a medicine, and it does not treat, cure or prevent any disease.
