Most residue in a brewing vessel sits exactly where a hand will not reach: the shoulder of a carboy, the inside of a spigot, the threads of a lid, the inside of a length of tubing. A brush set buys you contact where it matters. Long-handled brushes are for vessels, narrow bottle brushes are for necks and tubes, and a small detail brush handles threads and gaskets.
A highlighted stage means this tool has a direct role at that point in the process. Ticking several stages is normal — a thermometer, for example, is useful during both the first and second fermentation.
Inspect brushes before every use. A bristle that has shed into a vessel is easy to miss and unpleasant to find in a bottle. Replace any brush with a rusted metal core or exposed wire ends — wire fragments in a brewing vessel are a genuine hazard. Never use the same brush for cleaning and for stirring a live brew, and never use an abrasive scouring pad on plastic, since the scratches shelter microbes that sanitising will not reach.

Finished kombucha contains trace alcohol and caffeine. It is not suitable for children, and anyone who is pregnant, breastfeeding, immunocompromised, diabetic or taking medication should speak to a healthcare professional before drinking it. Kombucha is a food, not a medicine, and it does not treat, cure or prevent any disease.
